Palak (Spinach) Soup



Ingredients:

1 Cup finely chopped Spinach (Palak)
1/2 Onion Finely Chopped
 1 Tspn Minced Garlic
2 Bay leaves
2-3 pieces of Cinnamon
Salt to taste
1 Tspn Black Pepper Powder (You can adjust according to your taste)
2-3 Tblspn Milk
1 Tbslpn Oilve Oil



Procedure:
                           Heat Oil in Pan and saute minced garlic till it becomes light brown in color.

Now add Bay leaves and cinnamon and saute well.
Add chopped onions and saute till they beomes translucent.


Add chopped spinach and mix well.


Pour 1-1/2cup (or as required) water or vegetable stock and bring it to boil.
Once it starts boiling , switch off gas and let it cool for few minutes. Drain water (do not throw, we need to use it while grinding) and grind spinach in mixer adding little stock to fine puree.



Pour this puree in pan and heat it on slow gas.


Add black pepper powder, salt and cook.

 

Now add little milk at at time , do not boil soup otherwise milk will curdle.
Mix it well.



Serve hot with Bread-sticks or Garlic Bread.
