Rawa Idli (Semolina / Sooji / रवा इडली)



Ingredients:

1 Cup Rawa (Semolina)
1 Cup Beaten Yogurt
1/2 Cup Grated Carrot
Chopped Coriander Leaves
Few Cashewnuts
1 Tblspn Ginger + Green Chili Paste
1 Tspn Mustard Seeds
1 Tspn Urad Dal
 Few Curry Leaves
1/4 Tspn Asafoetida (Hing)
 Salt to Taste
1 Tspn Eno Fruit Salt
Water
Oil



Procedure:

Heat oil in a pan and add mustards seeds, urad dal.
Once Mustard sees starts spluttering and urad dal become light brown in color, add asafoetida and curry leaves.
Now add Rawa and roast continously on slow heat until light golden in color .
Remove in a plate and let it cool down completely.
In other bowl combine yogurt, ginger + green chili paste, chopped coriander leaves and salt .
Add this yogurt mixture in roasted rawa and mix well.
Add very little water at a time and mix well. Batter should be of dropping consistency.
Add Eno fruit salt and gently mix without beating it hard. 




Grease Idli stand ahead of time and place cashewnut in it.
Spoon the ready batter and steam it in a pressure cooker without weight / whistle on top for about 10 minutes.




Once done, let it cool down for sometime.
Run knife and remove idlis.
Serve with chutney .

Note:

You can serve these idlis as it is.
You can also serve them with tomato sauce, coconut chutney.
You can add corn, french - beans, beetroot, tomato as well.

मराठी पाककृती:


साहित्यः

१ वाटी रवा
 १ वाटी फेटलेले दही 
१/२ वाटी किसलेले गाजर 
बारीक चिरलेली कोथींबीर 
काही काजू पाकळ्या 
१ टेस्पून आले + हिरवी मिरची पेस्ट
१ टीस्पून मोहरी
 १ टीस्पून उडदाची डाळ 
कढीपत्ता 
१/४ टीस्पून हींग 
मीठ चवीनुसार 
१ टीस्पून एनो फ्रुट सॉल्ट 
पाणी 
तेल

पा़कृ:

पॅनमध्ये तेल तापवून मोहरी, उडदाच्या डाळीची फोडणी करून घ्यावी. मोहरी तडतडली व डाळ सोनेरी रंगावर परतली की त्यात कढीपत्ता व हींग घालावे. 
आता त्यात रवा घालून , गॅस बारीक करुन हलक्या सोनेरी रंगावर परतून घ्यावा. रवा चांगला परतला की एका प्लेटमध्ये गार होण्यासाठी काढून ठेवावा. 
दुसर्‍या बाऊलमध्ये दही, किसलेले गाजर, चिरलेली कोथींबीर, आले + मिरची पेस्ट व मीठ एकत्र करुन घ्यावे. दह्याचे मिश्रण रव्यात घालून चांगले मिक्स करावे. लागेल तसे पाणी घालून मिश्रण सरसरीत भिजवावे.
इडली स्टॅंडला तेलाचा हात लावून त्यावर मधो-मध एक काजू पाकळी ठेवावी. तयार मिश्रणात इनो फ्रुट सॉल्ट घालून हलकेच मिक्स करावे,  जास्त फेटू नये. 
तयार मिश्रण लगेच इडली स्टँडमध्ये घालून कुकरला वाफवून १० मिनिटे घेणे. (शिट्टी लावायची नाही)
इडल्या तयार झाल्या की थोड्या गार होऊ द्याव्या. मग सुरी फिरवून सुट्या करून घ्याव्यात. 
चटणीबरोबर सर्व्ह करा.

नोटः

ह्या इडल्या नुसत्या खायला ही छान लागतात. तुम्ही नारळाच्या, टोमॅटोच्या सॉसबरोबर हे सर्व्ह करु शकता. आवडत असेल तर ह्यात इतर भाज्या कॉर्न, फरसबी, बीट, टोमॅटो ही घालू शकता.
