Aamras (Flavored Mango Puree / Pulp / आमरस)

Aamras is a popular sweet dish in both Maharashtra and Gujarat.
It's plain Mango puree extracted from the famous Alphonso or Kesar Mango.
Very easy to make sweet dish.
Every Maharashtrian household prepares this dessert during summers and serve it with hot puffed pooris (unleavened deep fried bread).
We add Green cardamom powder, very little Nutmeg powder, Saffron strands to it.
Some people add a pinch of black pepper which helps in digestion.
You can even add dollop of clarified butter (Desi Ghee/ Saajuk Tup) over it and serve.

It's smooth, silky and pulpy. Traditionally mango pulp is squeezed out with cleaned hands and trust me it tastes incredibly amazing.


Ingredients:

3 Large Alphonso Mangoes (You can use Kesar mangoes as well)
1/2 Teaspoon Green Cardamom Powder
1/4 Teaspoon Nutmeg Powder
Few Strands Of Saffron (Kesar)
Very Little water or Milk


Procedure:

Wash and dry Alphonso mangoes.
Peel and chop them into pieces.
Add the chopped mango pieces in a mixi jar and blend to a fine, smooth puree.
To thin down the consistency you can add little milk or water.


Add cardamom powder and saffron strand and mix it well.
Chill in refrigerator.
Pour in serving bowls and serve it with hot, fried Pooris.


You can even serve it with Chapati / Roti.
Combination of Aamras - Puranpoli is super-duper Hit.

मराठी पाककृती:

साहित्यः

३ हापुस किंवा केशर आंबे, 
१/२ टीस्पून वेलचीपूड, 
/४ टीस्पून जायफळपूड
केशर 
थोडे पाणी किंवा दूध

पाकृ:

हापुस आंबे स्वच्छ धुवून, कोरडे करून घेणे.
साले काढून घ्यावे आंब्याचे तुकडे करावे.
मिक्सरच्या भांड्यात आंब्याचे तुकडे घालून मुलायम होईतो फिरवावे.
जर का रस थोडा पातळ हवे असेल तर दूध किंवा पाणी मिसळून पुन्हा एकदा मिक्सरला फिरवावे.
भांड्यात काढून त्यात वेलचीपूड, जायफळपूड व केशर मिसळावे.
फ्रिजमध्ये गार होण्यासाठी ठेवावे. 
सर्व्हिंग बाऊलमध्ये काढावे व गरमा-गरम पुर्‍यांसोबत सर्व्ह करावे.
तुम्ही आमरस चपाती/ पोळीसोबत सर्व्ह करू शकता. 
पुरणपोळी व आमरस हे काँबिनेशन भन्नाट लागतं.
