Ukadiche Modak



Ingredients for Ukad:


2 cups rice flour
2 cups water
2 tblpsn oil
2 tblspn Milk
a pinch of salt



Procedure:

In hard-bottom vessel add water, milk and oil and bring it to boil.
Once it starts boiling add salt and flour and mix well.
Simmer gas and let it cook covered for 1 minute.
Now knead dough for 5-8 minutes till it becomes soft, smooth and shiny.



Ingredients for Saaran:

2 cups grated coconut
1-1/2 cup grated jaggary
2-3 tblspn sugar (Optional)
1 tspn cardamom powder
1/2 tspn nutmeg powder

Procedure:

Combine coconut+jaggary+sugar and cook till it becomes sticky.
Make sure saaran must be little wet and not too dry .
Mix well cardamom-nutmeg powder.
Now take a samll portion of ukad and put it in a greased mould.
Spread dough inside mould by tip of finger.
Add saaran and carefully close the base of modak.
Demould them and dip them in water.
Place these modaks in a steamer/cooker (do not put weight/whistle) and steam for 15 minutes.
Traditionally they make puri out of ukad , make pleats to modak and place spoonful of saaran and then carefully close the mouth of modak.

I used modak mould for the same.

Serve hot with home-made pure ghee.
