Recipe Adapted here
Ingredients:
400ml milk
15 gms fresh yeast or 7 g dried yeast
200 gms whole-wheat flour
100 gms all purpose flour ( i used same )
Pinch of salt
1 egg
Procedure:
Warm the milk until lukewarm. Sprinkle the yeast into a small bowl.
Then mix the yeast with a bit of warm milk in a small bowl, stirring till it dissolves.
In a bowl, beat the flours, salt, yeast mixture, egg and the remaining warm milk with a whisk to a smooth batter.
Whisk well to remove any lumps.
Place a teatowel over the bowl and place in warm place for an hour to rise until mixture looks bubbly and double in volume.
Using a whisk, stir well to combine and prepare to pour into the poffertjes bottle or any pancake pen bottle.
Heat your poffertjes pan and when hot, lightly grease. (i dnt have this pan so i thought of using non-stick Appam Pan (Appe-patra in Marathi) ).
Then gently pour some mixture into each hole, filling them about 3/4.
After a few minutes, gently flip over.
Dust some icing sugar over the top or enjoy them with maple syrup / honey or butter.
