Ingredients: 1 cup gram flour (Besan), 1 inch ginger+2-3 green chillies crushed /paste, 3/4 cup buttermilk, 2 cups water, salt as per taste, 1/2 tspn turmeric powder, 1/2 cup fresh grated coconut, 1/2 cup chopped coriander leaves. For Tempering: 2 tblspn oil, 1/2 tspn mustard seeds, a pinch of asafoetida, 1/2 tspn sesame seeds (Teel).
Procedure: In a bowl mix gram flour,water , buttermilk, and ginger-chilli paste well. Now add salt and turmeric powder. Strain this mixture well .
Now pour this mixture in hard bottom vessel and stir continously till it starts thickening.
Once it gets thick lower the heat and cover and cook.
Cooked batter will look like this, silky, shiny.
Keep steel plates ready. IMP NOTE: NOT to grease plates with oil. Immediately while the batter it hot start spreading it evenly onto the plates. You should spread quickly.
Now mark out rows with the help of knife and garnish with corinder leaves and coconut.
Pour tempering on it and roll gently with dry fingers.
Serve with Pudina Chutney.
