Ambat Varan / Aamti (Maharashtrian Daal)


Ingredients:

2 cups washed and soaked tuvar / toor dal
2 garlic pods finely chopped
6-7 curry leaves
1 tspn mustard seeds
1 tspn cumin seeds
1/2 tspn Fenugreek seeds
a pinch of asafoetida
1 tspn Red Chilli Powder
1 tspn Maharashtrian Kala masala ( Can use garam masala)
1/2 tspn turmeric powder
4-5 Kokum (Black Mango Steen)
2 tblspn Grated Jaggary
1 tblspn Oil
Chopped Coriander leaves for garnishing.


Procedure:

Cook tuvar dal in pressure cooker until 3-4 whistles.
Heat oil in vessel and add mustard seeds, cumin seeds and fenugreek seeds and let them splutter.
Now add asafoetida, curry leaves and chopped garlic and saute.
Now add kokum and salt .
Mix well and cook for sometime.
Now add all spices , jaggary and cooked dal with little water and bring it to boil.
Garnish with coriander leaves and serve hot with steamed rice .
