Ingredients:
1 Cup Chana Dal (Bengal Gram)
1 Cup Urad Dal
1/2 up Sesame Seeds
8-10 Dried Red Chillies (Adjust according to your taste)
2-3 Sprigs Of Curry Leaves
1 Tspn Asafoetida
8-10 Black Peppercorns
Salt as per taste
1 Tblspn Oil
Procedure:
In a pan Dry Roast Black peppercorns and remove them onto a plate.
In the same pan heat 1 Tblspn oil and roast dried red chillies and curry leaves.
Once they are nicely roasted , remove them onto a plate.
In the same pan roast chana dal until golden brown in color.
Make sure you roast continously.
Keep roasted chana dal aside and now roast urad dal until light golden brown in color.
Now roast sesame seeds until golden brown.
Once cooled, combine everything together.
Add asafoetida, salt and fried dried red chillies and curry leaves to the roasted dal mixture.
Grind to a coarse powder.
Store this Podi in an air-tight container.
Serve dry or mix sesame or coconut oil and serve it with Idli, Dosa, Uttappam, Adai.

साहित्य:
१ वाटी चणा डाळ
१ वाटी उडदाची डाळ
१/२ वाटी पांढरे तीळ
८-१० लाल सुक्या मिरच्या (आवडीप्रमाणे कमी-जास्त)
भरपूर कढीपत्ता
८-१० काळीमिरी
१ टीस्पून हींग
मीठ चवीनुसार
१ टेस्पून तेल
पाकृ:
एका पॅनमध्ये कोरडेचे काळीमिरी भाजून घ्यावी व एका प्लेटमध्ये काढून ठेवावी.
त्याच पॅनमध्ये १ टेस्पून तेल गरम करून लाल सुक्या मिरच्या व कढीपत्ता परतून घ्यावा व बाजूला काढून ठेवावा.
त्यात आता चणा डाळ सोनेरी रंगावर परतून घ्यावी, तसेच उडदाची डाळ ही सोनेरी रंगावर परतून घेऊन , प्लेटमध्ये काढून ठेवावी. आता त्यात तीळ भाजून घ्यावे.
सगळे गार झाले के एकत्र करावे. त्यात हींग व चवीपुरते मीठ घालावे.
तळलेल्या मिरच्या व कढीपत्ता घालून मिक्सरवर भरडसर वाटून घेणे (कोरडेच)
हवाबंद डब्यात भरुन ठेवावे.
ही चटणी तुम्ही कोरडीच सर्व्ह करु शकताअ किंवा तीळाचे अथवा खोबर्याचे तेल घालून ,मिक्स करून इडली, डोसा, उत्तप्पा, अडई बरोबर सर्व्ह करु शकता.
