ADAI / ADA (अडई डोसा)

Ingredients:

1 Cup Rice
1/4 Cup Toor Dal
1/2 Cup Chana Dal
1/4 Cup Urad Dal
1/4 Cup Moong Dal
2 Green Chillies
3-4 Dry Red Chillies
1/2 Inch Ginger
Sprig of Curry Leaves
1/2 Tspn Fenugreek Seeds
1/2 Tspn Black Peppercorn
1/2 Tspn Asfoetida
Salt as per Taste



Procedure:

Wash, rinse all dals and rice together well.
Soak dal and rice along with fenugreek seeds for about 3-4 hours.
Drain water and put them in mixi bowl.
Add curry leaves, green chillies, dry red chillies, peppercorns, asafoetida, ginger into it.
Add little water and grind to smooth batter, same like dosa batter.
Now add salt as per taste and mix it well.
Heat non-stick pan and pour a ladle full of batter and spread it in circular motion.
 Drizzle sesame oil (Regular Oil is also ok ) around it. 
Let it get cooked.
Then flip it over to the other side and let it get cooked.



Remove it on a serving plate.
Serve hot with Coconut Chutney and Milagai Podi.

मराठी पाककृती:



साहित्यः
१ वाटी तांदूळ
१/२ वाटी चणा डाळ
१/४ वाटी उडदाची डाळ
१/४ वाटी मुगाची डाळ
१/४ वाटी तुरीची डाळ
३ लाल सुक्या मिरच्या
२ हिरव्या मिरच्या
आल्याचा छोटा तुकडा
कढीपत्ता
१/२ टीस्पून मेथीदाणे
१/२ टीस्पून काळीमिरी
१/२ टीस्पून हींग
मीठ चवीनुसार
तीळाचे तेल

पाकृ:

सर्व डाळी व तांदूळ स्वछ धुवून मेथीदाण्यासकट ३-४ तास भिजवून ठेवणे.
३-४ तासांनी पाणी उपसून मिक्सरच्या भांड्यात डाळ+तांदूळ घालावे.
त्यात कढीपत्ता, लाल सुक्या मिरच्या, हिरव्या मिरच्या , काळीमिरी, आले घालून, थोडे पाणी घालून डोश्याच्या पीठाप्रमाणे वाटणे.
वाटलेल्या पिठात चवीनुसार मीठ घालून मिश्रण एकजीव करावे.
नॉन-स्टीक तवा तापवून त्यावर डावाने मिश्रण ओतून पसरावे.
कडेने तीळाचे तेल (नसल्यास रोजचे तेल वापरावे) सोडावे.
एक बाजू झाली की उलटवून दुसरी बाजु ही होऊ द्यावी.
