Karalyachi / Karala Chutney (कारळ्याची चटणी)


Ingredients:

1 Cup of Karale (It Resembles Black sesame seeds, Also known as Thistle Seeds)
3/4 Cup of Curry leaves
4-5 Dry Red Chillies
1/4 Cup Sesame seeds
1/2 Cup Roasted peanuts 
1/4 Cup Dessicated Coconut
Salt as per taste
1/2 Tspn Asafoetida



Procedure:

In a pan dry roast Karale on medium-low heat until nice aroma starts coming out.
Remove them on a plate and dry roast sesame seeds until light golden in color.
Remove them onto a plate.
Heat a tablespoon of Oil and fry curry leaves until crispy.
Remove them on a plate and in same pan fry dry red chillies.
Remove them on a plate and keep aside.


In a same pan, roast asafoetida and dessicated coconut until light golden brown in color.
Remove them in a plate and let it cool down completely.
Now combine all roasted item together and put them in mixi bowl.
Add roasted peanuts and salt as per taste.
Grind it a fine powder.
Store in an air-tight container.


Your chutney is ready to eat.

मराठी पाककृती:

साहित्यः

१ वाटी कारळे 
३/४ वाटी कढीपत्ता
 ४-५ लाल सुक्या मिरच्या (आवडीप्रमाणी कमी जास्त) 
१/४ वाटी तीळ 
१/२ वाटी भाजलेले शेंगदाणे
१/४ वाटी सुके खोबरे 
मीठ चवीनुसार 
१/२ टीस्पून हींग

पाकृ:

एका पॅनमध्ये कारळे कोरडेच भाजून घ्यावे व एका ताटात काढून घ्यावे.
 त्याच पॅनमध्ये कोरडेच तीळ गुलाबी रंगावर भाजून घ्यावे  व ताटात काढून घ्यावे.
त्याच पॅनमध्ये एक टेबलस्पून तेल गरम करून कढीपत्ता तळून घ्यावा. 
तो कुरकूरीत झाला की काढून ठेवावा. 
त्याच पॅनमध्ये  मिरच्या तळून घ्याव्यात. 
त्याही बाजूला काढून ठेवाव्यात. 
आता पॅनमध्ये हींग व सुके खोबरे सोनेरी रंगावर परतून घेणे. 
सगळे थंड झाली की मिक्सरच्या भांड्यात एकत्र करावे. 
त्यात भाजलेले शेंगदाणे व मीठ घालून वाटून घ्यावे. 
कारळ्याची खमंग चटणी तयार आहे. 
हवाबंद डब्यात भरुन ठेवावी.
