Kairiche Panha (Aam Panna / Raw Mango Summer Drink / कैरीचे पन्हं)

A Super - Cool Kairiche Panha  / Aam Panna a quintessential summer drink. 

 Reminded me of my childhood Summer days where huge batch of panha was made for everyone in the family to beat the scorching heat. 

So many memories attached to summer time, a visit to aaji's place, seaside bhelpuri, lagori game with colony friends, playing mendi-coat with society friends, gorging onto cool kulfis, glasses of Panha to cool down, reading comics and story-books, pouncing on Mom-made Pista ice-cream, enjoying khatti-meethi imli rolled in gvava leaf alongwith salt, watching home-alone series and cartoon video cassetts on then famous VCR.

I truly miss good old days, childhood friends and the fun we had. This summer drink definitely transports me to my childhood days :)

Kairiche Panhe / Aam Panna is traditional Indian Drink made in every Indian household during summer. It's a refreshing thirst quencher, healthy and hydrating drink. 



Ingredients:

3 Medium - Sized Raw Mangoes
2 Cups Sugar / Jaggary (Adjust amount according to the tartness of raw mango)
1 Teaspoon Saffron strands 
1 Teaspoon Green Cardamom Powder
A Pinch Of Salt



Procedure:

Wash the mangoes and  pressure cook raw mangoes until 3 whistles.
Let it cool and peel off the skin. 
Scoop out tender pulp in another bowl.
Combine sugar with mango pulp and blitz till it is a smooth, thick paste.
Take it off in a clean jar and mix saffron, cardamom powder and salt.
Mix well and store in a refrigerator.



When serving, take a tablespoon or two in a glass and add cold water, mix gently.
You can add black salt, roasted cumin to the mixture.
I rubbed rim of glass with little lemon juice and dipped in salt + chilli mixture.
Top it up with ice-cubes and serve chilled.

मराठी पाककृती:

साहित्यः

३ मध्यम आकाराच्या कैर्‍या
दोन वाट्या साखर किंवा गुळ (कैरीच्या आबंटपणानुसार साखरेचे प्रमाण घ्यावे)
१ टीस्पून केशर
१ टीस्पून वेलचीपूड
चिमूटभर मीठ

पाकृ:

प्रथम कैर्‍या स्वच्छ धुवून कुकरला तीन शिट्ट्या होईतो शिजवून घ्यावे.
थोडे गार झाले की मऊसर गर चमच्याने वेगळ्या बाऊलमध्ये काढून ठेवावा.
त्यात साखर मिसळून मिक्सरला घट्ट, मुलायम वाटून घ्या.
स्वच्छ बाटलीत ते मिश्रण काढून घ्या.
त्यात मीठ, वेलचीपूड व केशर मिसळून चांगले मिक्स करावे.
हे मिश्रण तुम्ही फ्रिजम्ध्ये अनेक दिवस ठेवू शकता.

सर्व्ह करतेवेळी, एक -दोन टेबलस्पून्स गर घेऊन त्यात थंड पाणी घालून मिक्स करावे.
आवडत असल्यास काळे-मीठ, जीरेपूड ही घालता येऊ शकेल.

मी ग्लासच्या कडेला लिंबाचा रस लावला व ग्लासची कडा मीठ + लाल-तिखटाच्या मिश्रणात घोळवून घेतली.
वरून बर्फाचे तुकडे घालून थंडगार सर्व्ह करावे.
