Bhajaniche Vade (Maharashtrian Multigrain Poori / भाजणीचे वडे)


Bhajaniche Vade is a Maharashtrian delicacy and are usually cooked in the auspicious month of Shravan where "Mangalagaur" pooja is performed by newly married woman. These vade / Vadas are offered to Goddess Gauri as a Prasad. 

These vade / poori are made up of Bhajani which is a multigrain flour. Grains used to make bhajani are Rice, Urad Dal, Jowar, Chana Dal, Moong Dal, Wheat, Bajara, Whole Coriander seeds, Cumin seeds. These are then  roasted separately, mixed when cooled completely and grind to a coarse flour. We can make thalipeeth from this flour too. Flavour is pleasantly nice, robust, earthy, spicy and are healthy too. They are so flavourful that you can cook for an evening chai-time snacks or can have it for brunch.



Ingredients:

2 Cups Bhajani Flour / Thalipeeth Bhajani (Roasted Multigrain Flour)
1/4 Cup Chopped Coriander Leaves
1-1/2 Teaspoons Red Chilli Powder (Adjust according to yout taste)
1 Teaspoon Sesame Seeds
1/2 Teaspoon Carom Seeds (Ajwain / Ovaa)
Salt to taste
2 Tablespoons Hot Oil
Oil for frying Vade


Procedure:

Take bhajani in a mixing bowl and add coriander leaves, re chilli powder, carom seeds, sesame seeds and salt. Mix well and add hot oil.
Give it a quick mix and start kneading dough using warm water.
Cover and keep aside for an hour. 


After one hour, knead dough gently and divide it into 10-12 equal-sized balls.
Heat oil in a frying pan.
Apply little water on sheet of plastic, take a dough ball and pat round - shaped disc.
Make a hole in center using your index finger.
Deep fry vade over medium-high heat until done.



Serve hot with Loni (White Butter), Ghee or Yogurt + Mint Chutney + Tomato Sauce.

मराठी पाककृती:


साहित्यः

२ वाट्या थालीपिठाची भाजणी
१/४ वाटी बारीक चिरलेली कोथिंबीर
दीड टीस्पून लाल तिखट (आवडीप्रमाणे कमी-जास्तं)
१ टीस्पून पांढरे तीळ
१/२ टीस्पून ओवा
 मीठ चवीनुसार
२ टेबलस्पून्स कडकडीत तेलाचे मोहन
तेल वडे तळण्याकरीता

पाकृ:

मिक्सिंग बाऊलमध्ये भाजणी, लाल तिखट, कोथिंबीर, ओवा, तीळ व मीठ एकत्र कारावे.
त्यात कडकडीत तेलाचे मोहन घालून मिक्स करणे.
कोमट पाण्याने भाजणीचे पीठ मळावे व झाकून तासाभरासाठी ठेवावे.
तासाभराने पुन्हा चांगले मळून १० -१२ एकसारखे गोळे तयार करावे.
फ्राईंग पॅनमध्ये तेल गरम करायला ठेवावे.
प्लास्टिक शीटवर पाण्याचा हात लावून गोलाकार वडे थापावे, मधोमध बोटने भोक पाडावे.
मध्यम - हाय आचेवर सर्व वडे सोनेरी रंगावर खमंग तळून घ्यावे.

हे वडे तुम्ही लोण्यासोबत किंवा साजूक तुपासोबत किंवा दही + पुदिना चटणी + टोमॅटो सॉससोबत सर्व्ह करावे.
