Solkadhi (Coconut - Kokum Curry / सोलकढी)



Solkadhi is a popular drink from our very own Kokan / Konkan region of Maharashtra. This drink is a combination of Coconut milk + Kokum (Aamsul / Garcinia Indica) and is flavoured with chilli, ginger and salt.

It's very useful during summer time to beat the heat but can also be eaten alongwith seafood / meat as it's good for digestion and is a soothing beverage. Solkadhi and rice with fish is an amazing combination.



Ingredients:

10 - 12 Kokum Petals
2 Cups scarped / grated Fresh Coconut
1 Green Chilli
1 Garlic 
1/2 Inch Ginger
Chopped Coriander Leaves
Salt to taste




Procedure:

Soak Kokum petals in hot water for 15 - 20 minutes.
Gently squeeze Kokum and strain the ready pulp.

In a mixie - grinder combine fresh coconut, green chilli, garlic, ginger with warm water and grind to a fine paste.
Lined up a pot with cheesecloth and pour mixture.
Squeeze out coconut milk as much as possible.
You will get thick coconut milk.
Now add leftover pulp back in blender, add water and grind again.
Repeat the process of squeezing out milk, now you will get think coconut milk.
Combine both.

Take coconut milk in a pot and add kokum pulp / extract, salt.
Mix it properly and garnish it with chopped coriander leaves.

Solkadhi is ready to serve.

मराठी पाककृती:

साहित्यः

 १० - १२ कोकम पाकळ्या
२ वाट्या खवलेला ओला नारळ
१ हिरवी मिरची
१ लसूण
१/२ इंच आले
बारीक चिरलेली कोथिंबीर
मीठ चवीनुसार

पाकृ:

गरम पाण्यात कोकम पाकळ्या १५ - २० मिनिटे भिजवून ठेवणे.
हलक्या हाताने चोळून कोकमाचा पूर्ण अर्क काढून घेणे व गाळून घेणे.
मिक्सरच्या भांड्यात ओला नारळ, मिरची, लसूण, आले व कोमट पाणी एकत्र करून मुलायम वाटून घेणे.
एका भांड्यात मलमलचे कापड ठेवून ,मिश्रण ओतून, नारळाचे दूध जमेल तितके पिळून काढून घेणे.
आता उरलेले वाटण पुन्हा मिक्सरच्या भांड्यात घालून, पाणी घालून वाटून घेणे.
पुन्हा मलमलमध्ये गाळून पिळून घेणे.
त्यात चवीनुसार मीठ व कोथिंबीर घालून सर्व्ह करणे.
